Ingredients to Make Red Velvet Cake: 

  • 2½ cups of Flour (350 grams) 
  • ¼ cup cocoa or cocoa powder 
  • 1½ cups of Sugar (300 grams) 
  • 2 teaspoons baking powder 
  • 1 teaspoon of baking soda 
  • ½ teaspoon of Salt 
  • ½ cup unsalted butter 
  • ¼ cup vegetable oil 
  • 3 eggs 
  • 2 teaspoons white vinegar 
  • 1 cup of buttermilk 
  • 2 teaspoons vanilla extract 
  • Red pastry food coloring 

Ingredients For The Red Velvet cake cream cheese:

  • 8 ounces cream cheese
  •  Icing sugar (to taste) 
  • 4 tablespoons unsalted butter 
  • 2 tablespoons milk 
  • 1 teaspoon vanilla extract

Steps to Make Red Velvet Cake 

  1. Step 1: The first step will be to get the ingredients ready and preheat the oven to 350º F. Take the opportunity to prepare the mold where you are going to make the red sponge cake and grease it with oil, butter or line the base with baking paper. If you can’t get the buttermilk, you can make it yourself. To do this, cut a cup of milk with lemon or vinegar and let it rest for about 10 minutes.
  2. Step 2:  To make the cake batter, start by sifting the flour together with the baking powder, bicarbonate, salt and cocoa in a mold and reserve. Remember that sifting means passing through a strainer or fine mesh, this will prevent lumps from forming when mixing.
  3. Step 3: Mix the butter with the sugar and vegetable oil with the help of a blender. When all is well integrated, it will be time to add in the eggs together with the vanilla and cream. Beat the whole mixture up until you get an equal mixture
  4. Step 4: We already have the two base preparations ready, so now we go with the coloring. To do this, mix the buttermilk with the vinegar and enough red food coloring until you get an intense color. Then add this red mixture to the mold with the dry ingredients and stir until you get a smooth dough.
  5. Step 5: We will make the red velvet cake with a filling, so you can pour the mixture into two molds or cook it in one that will then be divided in two. With this in mind, bake the red velvet cake for about 25 minutes or until cooked. Once ready, let the cake cool for about 15 minutes before unmolding. Then remove from the mold and let it cool completely on a wire rack.
  6. Step 6: You can then go making the cream cheese frosting. To do this, mix all the ingredients on the list with a blender until you get a creamy consistency.
  7. Step 7: To finish preparing the red velvet cake, use the frosting as a filling or to cover it and enjoy! 

Assembling the cake:

  • If necessary, with a long serrated knife or lyre we will cut the cakes just enough to even and level the surfaces.
  • We place the first sponge cake face down on the base (if we have a rotating support it would be of great help, if not, we will turn “by hand”) on a spoonful of frosting; this way we will make sure that it does not move while we work. 
  • With a small spatula we spread a generous layer of our Cream Cheese Frosting on the upper surface, which we will smooth carefully so that the colorant does not transfer and stain it.
  • We place the second cake on the previous one well centered and upside down as well. With a long, straight spatula we now spread a thin layer of the topping (crumb coat) all over the cake (it doesn’t need to be perfect) and put it in the refrigerator for 30 minutes like the rest of the frosting. 
  • Now we cover the cake with the rest of the topping, using the long spatula to cover it completely with a thicker and more careful layer. We will try to smooth the surfaces as much as possible
